Savory Asian Style Pumpkin


Savory Asian Style Pumpkin
Pan seared and braised in crushed garlic and chicken stock

Ingredients

2 cloves of garlic, crushed down
1.5 to 2 lbs of pumpkin, cubed to 1 inch size
0.5 cup chicken stock
1 tsp of crush cane rock sugar
1/8 tsp salt
1 tsp black bean sauce OR oyster sauce
Cilantro leaves (optional)

1. Heat a searing pan with oil and fry the garlic until slightly golden.
2. Add in the pumpkin, salt and sear for 2 to 3 minutes.
3. Pour in the chicken stalk and add the rock sugar.
4. Cover cook at medium heat until soften. Stir occasionally.
5. Add the black bean sauce.
6. Cook and mix for 1 minute. Plate and serve with rice.

The dish in the picture was made with black bean sauce with cilantro as garnish. I feel the black bean sauce made it too salty. I prefer a sweet savory flavor for the pumpkin. So for my second attempt, I used oyster sauce and diced cilantro towards the end. Sorry, no pictures. But I can tell you this.....it was good !!
