Oatmeal Banana Walnut Muffin


Ingredients

1.5 cup of all purpose flour
1 pack of instant oatmeal (pre-soaked in half cup water)
0.5 cup butter
0.5 cup sugar (or brown sugar)
4 large super ripe bananas (mashed)
1 tsp baking powder
0.25 tsp of salt
2 medium eggs, beaten

Preheat oven at 350F
Line muffin tin with paper cups.
Mix flour, salt, and baking powder together.
In a separate bowl, cream butter and sugar. Then stir in bananas, oatmeal and eggs.
Pour the banana mixture into the flour and mix until well blended.
Fill each muffin cup with batter to 80 to 90 % full (if you ran out of batter, fill the empty cup with water).
Bake muffins for 35 to 40 minutes.
