Corn Salsa



Ingredients

1 can of corn kernels
1/2 large tomato, pitted and diced
1/4 red onion, finely diced
1/2 green onion, finely diced
1/2 jalapeño, seeds removed and finely diced
1 lime
Parsley leaves, coarsely chopped
Pinch of salt

1. Combine tomato, red onion, green onion, jalapeño, lime juice, and salt. Allow the mixture to marinate for 10 to 15 minutes.
2. Drain the liquid out of the can of corn and mix the kernels into the veg.
3. Fold in parsley leaves

Can be eaten immediately or refrigerate for later. Best eaten with corn chips (sweet chilli heat Doritoes, my fav), guacamole, or as side dish for a BBQ meal.

This salsa share the same ingredients for guacamole. I would recommend making these together.
