Tomato Stir fry with Shirmp and Omelette


This is what I made with the leftover ingredients from Corn Salsa and Guacamole.

Ingredients

1 large tomato, cut into 8 segments
1/2 red onion, coarsely chopped
2 green onions, cut into 1 inch length
3 tbsp of ketchup
1 tsp of soy sauce
3 large eggs
2 to 3 tbsp of water
2 cloves of garlic, smashed
Parsley leaves, coarsely chopped
Shrimp - shell removed and marinated with a pinch of sugar, soy sauce, and sesame oil (follow this order!)
Salt and sugar to taste

1. Whisk eggs and parsley leaves with a dash of water and oil.
2. Pan fried the eggs and chop them into large chunks. Set them aside.
3. Add oil into pan and stir fried the garlic.
4. Then add tomato, red onions, one pinch sugar and two pinches of salt. Continue stir frying.
5. Next add ketchup, water, and soy sauce. Mix, cover and cook for 1 to 2 minute.
6. Add in shrimp and green onions. Continue to cover and cook for 2 to 3 minutes or until the shrimps are done.
7. Stir in the omelette, plate and serve.
