Roast Pork Fried Rice


Ingredients:

2 to 3 cups of cooked rice (leftover, refrigerated)
Roast pork, diced
3 eggs, whisked
2 green onions, diced
1 tsp salt
1 tsp dark mushroom soy sauce
1.5 tbsp oyster sauce
1 tbsp soy sauce
4 tbsp oil

1. Heat wok at high heat until it passes water drop test.
2. Wipe the wok and add oil. Spread the oil and allow it to heat up (about 30 secs)
3. Spread the oil once more, turn heat down to medium, and add in the eggs. The egg should puff up immediately...at this moment, vigorously stir the eggs.
4. When the eggs are 2/3 cooked through, add in the rice. Stir to combine and crush any large pieces.
5. Add in salt. Stir fried for 1 minute.
6. Add soy sauce and oyster sauce. Mix well.
7. Add roast pork. Mix well.
8. Stir fried until steam comes out.
9. Add in green onions. Give it a light toss and serve.
