Guacamole



Ingredients

2 ripe avocados
1/2 large tomato, pitted and diced
1/2 jalapeño, seeds removed and finely diced
1/2 green onion, finely diced
1/4 red onion, finely diced
1 lime
Fresh parsley leaves, coarsely chopped
Pinch of salt

1. Combine tomato, jalapeño, red onion, green onion, lime juice and salt. Mix and allow it to marinate for 10 to 15 minutes.
2. Open and extract meat from avocado into the vegetable mix.
3. Mash the avocado while creaming together the vegetable.
4. Fold in the parsley leaves.
5. Finish by folding a little lemon juice to keep it nice and green (optional)

Best eaten immediately. Or place plastic wrap on top and touching the guacamole, refrigerate for later use. But don't keep too long or else it will turn brown and yucky.
